tonight's dinner
Feb. 15th, 2009 10:41 pmSauteed chicken over saffron rice
Basmati rice with salt & a pinch of saffron, made in the rice cooker
A few small bits of butter on top of the rice once it was done
(the saffron was from Trader Joes, and was cheap!)
Chicken:
2 chicken breasts, beaten with the meat tenderizer & cut into small cubes
sauteed in olive oil
added: salt, pepper, onion & garlic powder, a couple of splashes of white wine, then this lovely smokey paprika that I got at Kitchen Kapers, then a pat of butter
once the chicken was cooked, added a cup of warm chicken stock & a bag of frozen broccoli heads
simmer until broccoli was cooked, thickened sauce with corn starch
At the end I sprinkled a little more garlic & onion powder in because it tasted a little bland.
Based on the way the boi was licking the bowl, I'd call it a success. :)
[Edit: Instead of adding a pat of butter & chicken stock, make a cup of chicken gravy at first & set aside. Add it right before the broccoli. At the very end, sprinkle a little lime juice over everything & stir.]
