I'm not sure I have ever posted this one... It's a different version of challah that results in a sweeter, softer loaf than my previous standby. I believe it came from [livejournal.com profile] luluisme who got it from [livejournal.com profile] skyethebard ... I modified it slightly by adding more flour for a less sticky dough, which makes it easier to braid.

Challah Bread for the Bread Machine: New Improved Recipe!

3/4 cup milk (or water... I used water in the last batch because we were low on milk & it was just fine)
2 eggs
3 tablespoons butter, cut up into nuggets or softened
3 1/4 cup bread flour (500 grams)
1/4 cup sugar
1 1/2 teaspoon salt
1 1/2 teaspoon yeast

Egg wash:
One egg yolk
One tablespoon cold water

Mix on dough setting in bread machine. (I only make bread using the bread machine. If you make bread completely by hand... I can't really help you. Sorry!) Divide dough into three equal parts. Roll each piece of dough into ropes about 12 inches long. Braid, cover with dish towel & let rise in a warm place for 45 minutes. (I turned the oven on for a minute then turned it off & put the bread in there, since our house is pretty cold right now.) Brush with a mixture if one egg yolk & one tablespoon cold water (sprinkle with poppy seeds if you like). Bake at 350 degrees for 25 - 30 minutes.

Even two days later this bread is soft, sweet and delicious, perhaps in part because it's been stored in a ziplock bag. I can eat this bread as is, no butter or anything. It's just that good. Although last night I spread on a little chocolate ganache (in lieu of Nutella), and it made a lovely dessert!KEEWERD
