Hamburger Helper - Beef Stroganoff
Mar. 14th, 2010 06:38 pmE & I were talking about "white trash" foods (brainstorming for a friend's party next week) and we started talking nostalgically about Hamburger Helper. E can't eat it anymore due to a sensitivity to MSG, and I'd rather make stuff from scratch, so I started Googling for clone recipes. I found this page www.recipezaar.com/hamburger-helping-mix-in-a-jar-123585 which has a recipe for a Hamburger Helper mix that you can make ahead & store in a jar, using about a half cup of the mix with each batch you make. Since we don't know if we're going to like it, I converted the recipe down to a single batch.
Clone of Hamburger Helper Beef Stroganoff:
For the dry mix:
4.5 tablespoons dry milk powder
2 tablespoons and 1 teaspoon cornstarch
1 teaspoon onion powder
1/4 teaspoon basil
1/4 teaspoon ground black pepper
1 teaspoon parsley flakes
1/2 teaspoon garlic powder
One pound ground beef
4 cups beef stock
2 cups water
5 cups uncooked egg noodles (or a half pound of your favorite pasta
1 cup frozen peas
2 cups sour cream
Brown the ground beef with some salt, pepper, garlic & onion powder (not listed in ingredients) and drain the fat off.
Add the beef stock, water, the dry mix, peas, and the egg noodles.
Simmer and stir about 10 minutes or until the noodles are tender.
Add sour cream and stir until blended well.
I'll update after dinner to let y'all know how it went. :)
UPDATE: Oh yeah, that worked fabulously! Will make again. I did have to add about a half cup of extra water and had to stir a few times while simmering. Also, I seasoned the meat while browning it. E requested more noodles next time. This made about 5 servings.
UPDATE # 2: This works just fine with a half pound of whatever pasta you have on hand (I just tried it with thin spaghetti broken in half, since we were out of egg noodles).
