Low-carb Chocolate Cream Cheese Spread

2 ounces (by weight) sugar-free dark chocolate
3 ounces (by weight) cream cheese
1/4 teaspoon vanilla extract
2 tablespoons sour cream or Greek yogurt
6 drops liquid stevia
pinch of salt
Melt butter & chocolate together in the microwave, about 20 - 30 seconds, until just softened. Stir well and set aside to cool. In separate bowl (I just used the plastic cream cheese container) stir together the other ingredients. When the chocolate/butter mixture has cooled somewhat, stir it into the cream cheese mixture until well-blended. Allow your tasty concoction to cool in the refrigerator before serving. Serve with fruit, spread on a scone or bagel, or just eat it with a spoon. It tastes like spreadable chocolate cheesecake!

I found Guylian brand sugar-free Belgian dark chocolate at Fred Meyer for about $3.50 for a 4 ounce bar. Trader Joe's has a sugar-free dark chocolate bar for $1.99 for a four ounce bar. I think either would work well.
