Meatloaf!

I don't think I've ever made a meatloaf before.  How weird is that?  So I made one last night with lean ground beef that I bought at our local butcher, and kinda-sorta followed a Gordon Ramsay recipe, with a few modifications.  It turned out quite nicely.

Meatloaf Recipe:

2 pounds ground beef
3 tablespoons butter, melted (used because it was very lean beef.  Might not need it if you are using a higher fat beef.)
1 tablespoon Worcestershire sauce
2 eggs, beaten
1 cup Progresso plain bread crumbs
1 tablespoon-ish onion powder
1 tablespoon-ish garlic powder
3/4 cup ketchup (1/2 cup to mix into the loaf & 1/4 cup for the top)
salt & pepper

Mix all ingredients except 1/4 cup ketchup together.  Press into an oiled loaf pan.  Top with remaining ketchup.  Bake for 25 minutes at 350 degrees, then increase oven temp to 400 degrees and bake another 35 - 45 minutes, until the internal temp of loaf reaches 160 degrees.  Remove from oven & let rest for a few minutes before slicing.

If sliced into 8 even slices, here is the nutritional breakdown as per myfitnesspal.com recipe caluculator:

285 calories/20 grams carbs/11 grams fat/24 grams protein/1 gram fiber

I could probably reduce the amount of bread crumbs and find a lower carb ketchup to make this a more low-carb meal.  Gordon Ramsay's recipe called for 2.5 cups of bread crumbs, which I thought was kinda crazy.

I used a Heinz Ketchup with balsamic vinegar for the topping, and regular ketchup for the mix.  I liked the balsamic vinegar ketchup a lot, as it was less sweet than regular ketchup.

Anyhow, it was yum.  Will make again.  :)
