Baked Parmesan Crusted Chicken Breast

1/2 teaspoon garlic powder
1/2 cup dry bread crumbs
3 tablespoons grated Parmesan cheese
1 tablespoon grated Romano cheese
1 tablespoon grated Romano cheese
1/2 teaspoon dried thyme
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/8 teaspoon pepper
1/4 teaspoon salt
3 (4 ounce) skinless, boneless chicken breast halves, pounded slightly with mallet
Preheat oven to 350 degrees F.
Melt the butter in the microwave in a shallow bowl or smallish glass pan with sides until just melted. Stir the bread crumbs together with the Parmesan cheese, garlic, spices, pepper, and salt on a large plate. Dip the chicken breasts in the butter, then press into the seasoned bread crumbs. Place the chicken into a greased 9x13 inch baking dish (I lined the baking dish with non-stick aluminum foil and greased it with a little olive oil). Sprinkle a little extra salt over the top.
Bake in the preheated oven until the chicken is golden brown and no longer pink in the center, 50 to 55 minutes. (I used a thermometer and baked until the thickest part of the chicken was 180 degrees F. I also broiled the chicken briefly to crisp up the tops.)
Served with green beans and egg noodles. Yum yum!
