Low-carb vanilla one minute muffin

I just made this for the first time, crumbled the muffin into a bowl, mixed with strawberries, and drizzled it with heavy cream.  It was delicious strawberry shortcake!

Ingredients:

1 tbsp (7g)  coconut flour

1 tbsp (7g)  almond meal
1 tbsp (7g)  vanilla zero carb whey protein
1 tbsp (15g)  'Swerve' or other sugar equivalent
1/2 tsp (2g)  baking powder
1 dash (0g)  salt
1 large (50g)  whole egg
1 tsp (4.67g)  butter, melted
1/2 tsp (2g)  vanilla extract

In a wide-mouthed coffee mug, combine your coconut flour, almond meal, protein powder, sugar replacement, baking powder and salt. Mix in your egg, melted butter and vanilla. Microwave on high for 60 seconds, (90 seconds if using a weaker microwave, or if you've added lots of other ingredients, like nuts, frozen berries, etc.)

209 calories / 13 grams fat / 16 grams protein / 7 grams carbs (ignoring sugar alcohols) / 4 grams fiber / 3 grams net carbs
