These taste just like the roasted cinnamon almonds you can often get at street fairs that smell so damn good.

Based on this recipe and the suggestions of a reviewer of said recipe:  http://allrecipes.com/recipe/cinnamon-roasted-almonds/

2 cups whole raw almonds
2 cups raw pecan halves
1 egg white
1 teaspoon cold water
1 teaspoon vanilla extract
1/3 cup melted butter, cooled but still liquid
1/2 teaspoon cinnamon
1/2 cup white sugar
1/2 cup brown sugar
1/2 to 1 teaspoon salt -- I prefer more than less salt

Preheat oven to 250 degrees F.  Cover a 10 x 15 inch jelly roll pan with parchment paper.
Lightly beat the egg white; add water, and beat until frothy but not stiff. Beat in the vanilla extract and melted butter.  Add the nuts, and stir until well coated. Mix the sugars, salt, and cinnamon in a separate bowl and sprinkle over the nuts. Stir to coat, and spread evenly on the prepared pan.
Bake for 1 hour in the preheated oven, stirring every 15 minutes, until golden and no longer wet. Allow to cool, then store nuts in airtight containers.

I took a big jar of these to a friend's fire pit last night.  They were quite the hit.  :)


Note: Cashews work really well in this, too!
