Low-Carb Chocolate Truffles

Ingredients
For the ganache:
3/4 cup heavy cream
2 teaspoon instant espresso powder (Optional. I omitted this the second time I made them and I liked them better.)
4 ounces unsweetened chocolate, broken into pieces (This time I used Hershey's because that's all I had on hand, but I prefer Ghirardelli's brand)
1/3 cup powdered calorie-free sweetener (I used a blend of powdered monkfruit and allulose)
2 tablespoon butter, cut into small pieces
1 teaspoon vanilla extract
dash of salt
(I tasted the ganache and added additional sweetener, a few drops of liquid stevia and about a quarter cup of powdered sweetener.)
For the coating:
cocoa powder
cinnamon
powdered sweetener
Pour the heavy cream into a large microwave-safe glass bowl. Add espresso powder. Cook on high for about 90 seconds until boiling. Add the chopped unsweetened chocolate. Let sit for about 5 minutes. Add the sweetener, butter, vanilla extract, and salt. Whisk until smooth. Place in fridge to cool until firm but scoopable, about 3 hours.
Using about 1 tablespoon at a time, scoop into balls and roll into a mixture of cocoa powder, cinnamon, and powdered sweetener. You can also roll the balls in coconut or finely chopped nuts. Or you can melt down some sugar-free chocolate chips, add a bit of coconut oil or cocoa butter, and dip the balls into the coating. If you're going to coat the balls in chocolate, freeze them for about an hour first.
Store your balls in the fridge.
