curried chicken salad
Jun. 20th, 2012 10:51 amBoil 1 pound chicken breast in seasoned and salted water until completely cooked (I seasoned the water with pepper, garlic powder, onion powder, and some random seasoning mix that I found in the cupboard.) Chop cooked chicken into cubes. Whisk 4 ounces (by weight) mayo; curry powder (to taste) together, stir chicken into mayo mixture. Add 30 grams chopped cashews if you like (I used the Thai Chili & Lime cashews from Trader Joe's).
I made my own curry powder, since I didn't have any pre-mixed on hand:
2 tablespoons ground cumin
2 tablespoons ground coriander
2 teaspoons ground turmeric
1/2 teaspoon ground mustard
1/2 teaspoon ground ginger
I probably used about 1/4 of the curry powder mixture in the salad. I didn't want the flavor to be overpowering.
Yields 20 ounces (by weight) of salad, or four 5 ounce servings. 5 ounces = 142 grams of salad = 32 grams protein/1.25 grams carbs/418 KEEWERD
