gluten-free low-carb peanut butter bread
Jul. 4th, 2012 02:36 pmI tried this recipe out today. It's interesting... the texture is good for a quick bread. You can go either sweet or savory with the flavor. I was trying for a peanut butter chocolate chip sweet quick bread, but didn't add enough stevia (I used 4 drops of concentrated stevia extract). Still, it was pretty tasty.
1 cup natural almond/peanut butter, smooth
3 eggs
1 Tablespoon vinegar
1/2 teaspoon baking soda
1/4 teaspoon salt (if PB already has salt, you can omit)
2 servings Stevia (to taste, more if you want sweeter bread)
A handful or two of semi-sweet chocolate chips
Mix all ingredients well in large bowl, pour into a foil-lined loaf pan (I sprayed my foil with Pam as well). Bake at 350 degrees for 22 - 25 minutes until a toothpick comes out clean.
Next time I would either add more salt, omit the chips to go with a savory bread, or I might try adding cocoa powder and more stevia to make a sweet chocolate bread.
