Cut potatoes into quarters.  Par boil them for 7-10mins. The most important part - drain and then shake them up really well in a metal colander so they become fluffy and scuffed around the edges. Melt enough butter to cover your potatoes. I'd recommend up to 1 Tbsp per serving. Add salt (unless butter is highly salted), pepper and half a teaspoon of dried rosemary to the melted butter and mix together. Finally, place the potatoes in your roasting tin and pour the melted butter over, liberally covering the potatoes. In the oven at 400 for 60mins ish. I don't turn mine during cooking but you can if you wish. They need to be super fluffy on the edges and really well covered in the butter.
