PUDDING SHOTS!
Mar. 30th, 2015 10:17 amThis past weekend, instead of making Jello shots for a friend's birthday party, I made pudding shots. You guys! These were SO good! Even people who thought they wouldn't like them thought they were delicious. Here's what I did:
1 large (4.6 ounce) box of Cook and Serve Jello Pudding (chocolate or vanilla)
1 cup whole milk
1/4 cup vodka
1 cup of other alcohol (Irish Cream, Frangelico, Kahlua, etc.)
1 8 ounce tub Extra Creamy Cool Whip (thawed)
Canned or fresh whipped cream for garnish
Cook the pudding as per the box instructions, but using only one cup of milk. You must stir continuously so that the pudding doesn't scald. Allow the pudding to cool on the stovetop. Once it has come to room temperature, whisk in the alcohol, then the Cool Whip. Pour into shot glasses (I used plastic disposable shot glasses that look like red Solo cups) and freeze overnight. Top with whipped cream and serve with a small spoon.
With the vanilla pudding I stirred in equal parts Irish Cream, Kahlua and Frangelico to make a BFK. With the chocolate pudding I just used a cup of Irish Cream. There was more pudding mixture than I had shot glasses for, so I just poured the extra into the empty Cool Whip containers and froze it. Due to the alcohol content it doesn't freeze solid. It's soft and scoopable, and oh so tasty.
You can easily experiment with other flavors. I want to try a version that is just vanilla pudding & Kahlua, to make a White Russian. Or maybe vanilla pudding and butterscotch schnapps, with a drizzle of caramel sauce.
